Want an easy energy packed recipe to fuel you on your ride? Then Emma's vegan chocolate coconut oat recipe is for you. Simply combine all the ingredients and gently heat in a pan. Once cooked, add your chosen choice of toppings!
Ingredients:
90g quick oats (about a cup)
A pinch of salt
300ml light coconut milk (about a cup)
20g (2 tablespoons) cocoa
36g vegan protein powder, chocolate flavour (this is about 2 scoops of the brand we used)
Optional Toppings:
30g (2 tablespoons) muscovado sugar or agave nectar
10g vegan dark chocolate (1 square) or cocoa nibs
10g (1 tablespoon) desiccated coconut

Fat (g) 21.7
of which saturates (g) 14.2
Carbohydrate (g) 39.2
of which sugars (g) 7.3
Protein (g) 18.9
Salt (g) 0.8
Fibre (g) 7.6
